Vermentino fermented partially on skins for 10 days. Blended with 10% Chardonnay from French oak. This is a playful wine combining the complexity and richness of texture from lees, skin contact and mature oak, with a vibrancy and liveliness from yeast derived Petillant of slight bottle fermentation. This fun in fizz for summer. Cheese, pasta, seafood and good times. Out of the box thinking, and a spin on the traditional Pet Nat style.
